Rosé of Pinot Noir Brut Nature, Val de Mer

The Val de Mer by Patrick Piuze Brut Nature Rosé is bone dry, presenting cherry blossom and currant on the nose with faint notes of red apple skin, cherry, and subtle marzipan on the finish.

100% Pinot Noir fruit from the town of Tonnerre, located 10 miles from Chablis. The grapes are hand-harvested. After a short maceration on the skins for color, the juice is fermented and aged in stainless steel tanks before undergoing secondary fermentation. The wine is aged for 9 months on the lees before it is disgorged. No dosage is added. The resulting wine is super dry, zesty, and mineralic.

Val de Mer is the latest project of Chablis' newest star, Patrick Piuze. After more than a decade making wine in Chablis for the likes of Olivier Leflaive, Verget, and Jean-Marc Brocard, Patrick Piuze began his own label in 2008, sourcing top quality fruit by using the many connections he had made in the region over the years. The wines were immediately praised by critics and a new star was born.
