Gretchen seeks to bring a balance of both feminine and masculine energy to her wines. She likes to keep the wines more acidic and crisp with delicate handling, but she also likes to incorporate some skin contact with whites and pay close attention to fruit manipulation of reds to get good tannin structure from the wines themselves. This is why she chose the name 'Luna Hart' as a representation of this balance. Luna or the moon being feminine and Hart or the stag being masculine.
Gretchen's FRESH Cabernet Franc goes through Carbonic Maceration, which is a winemaking process that takes place during fermentation to produce fresh, fruit-forward, low-tannin red wines. Carbonic maceration uses whole clusters of grapes in a sealed, carbon dioxide-filled tank to start fermentation within each grape. Carbonic maceration occurs naturally when whole clusters of grapes ferment in an oxygen-poor [anaerobic] environment, so it may have been a part of winemaking for many years before it was recognized as a distinct process. The French scientist Louis Pasteur [WHAT??? This is such a cool fact we came across when researching!!!!] was the first to study carbonic maceration’s effect on a wine’s flavor versus regular [aerobic] fermentation.
