Gretchen seeks to bring a balance of both feminine and masculine energy to her wines. She likes to keep the wines more acidic and crisp with delicate handling, but she also likes to incorporate some skin contact with whites and pay close attention to fruit manipulation of reds to get good tannin structure from the wines themselves. This is why she chose the name 'Luna Hart' as a representation of this balance. Luna or the moon being feminine and Hart or the stag being masculine.
Honeybear Orchard and Vineyard is farmed biodynamically and with acute attention to detail. The farming of this fruit allows for a pure expression of varietal in the wine.
Once the grapes reached optimal brix, they harvested and destemmed the fruit. The fermentation happened naturally retaining site specificity and bright aromatics. This wine was aged in 52% neutral French oak, 36% neutral hog, and 12% new French oak for 11 months. The complexity in this wines aging gives an additional depth and longevity to the palate.
